•Whole fish should not have any discolouration and must be free of ice crystals.

•In markets avoid buying packets that are kept above frost line.

•Fillets should have no drying out sign, or white spots or even dark brown spots.

•Use your nose as the ultimate tester. The odour of the fish will tell a lot about its quality and taste.

•If the oil or fat in the fish is rancid try avoiding it as it might not be fresh.
